What I made for Dinner

Introducing [livejournal.com profile] chaoswolf Can Cook --- More Than Boring Food!

  • Check Freezer. Find Meat. Any kind will do, tonight's was chicken.
  • Create chilli oil
    1. 1 cup olive oil (any will do)
    2. 1 tsp Ancho Chilli Powder
    3. 1 tablespoon crushed red pepper flakes (the packs that come in pizza boxes are a good source
    4. 1 & 1/3rd tsp sweet paprika (I used Hungarian, but any will do)
    5. 1 & 1/3rd tsp hot paprika (again, I used Hungarian)
    Mix in a jar. The original recipe calls for 2 cups of olive oil, but I was using a small jar. I took the chicken out of the freezer and placed into a large glass baking pan, coating 8/12 of the thighs with this delicious oil, the other three were saved for the YS ([livejournal.com profile] super_star_girl.)Place into 350 degree oven for 1 hour.
  • Bowl of brussle sprouts, cut into 1/4 pieces, then with 1 stick of butter microwaved.
  • Pasta, melted butter over the top.

I'm not a great fan of chicken, mainly because a lot of modern chicken has gotten funny tasting to me, but this sounds great (I love good chili oil, in particular).

It _is_ possible for chili oil to be too hot.* Tasty and just hot enough is my preference.

*I do know people who would not agree with this statement. You probably do, too. But then, I like garlic in far too many things....

Was tasty. The chili oil was still pretty mild in my opinion.

Ooh, that sounds delicious! And my family loves a good chili oil; I'm going to have to make some. :)

Sounds tasty.

As for the "heat" of the oil, it wasn't the use of the mild paprika, but the non-use of lots of hot pepper that made it mild. The sweet paprika adds flavor notes.

Sounds yummy, wish I could it eat it. Unfortunately, I have a severe allergic reaction to peppers of any kind. sigh...

Maybe someday I'll get my allergies under control and scarf down a plate of this wonderful dish.
